- Step 1.1. Soak the Chickpeas (Start 1 Day Ahead): Place the dried chickpeas in a large bowl and cover completely with water.
- Step 2.The chickpeas will swell and absorb the water as they soak.
- Step 3.Let stand for 24 hours, then drain thoroughly.
- Step 4.2. Make the Falafel Mixture: Add the soaked chickpeas to a food processor and grind them.
- Step 5.Once the largest pieces are broken down, add:

- Step 10.Spices
- Step 11.Continue grinding until the mixture forms a sturdy, malleable texture.
- Step 12.Taste the mixture and adjust seasoning — falafel can easily become too bland.
- Step 13.3. Shape the Falafel: Form balls by hand, slightly smaller than croquettes.
- Step 14.Squeeze them firmly so they hold together well, as the mixture can crumble if too loose.
- Step 15.4. Preheat the Airfryer: Preheat to 180 °C.
- Step 16.5. Airfry – First Round: Carefully place the falafel balls in the basket.

- Step 23.Increase temperature to 190 °C and bake for another 5 minutes.
