- Stap 1.1. Soak the Chickpeas (Start 1 Day Ahead): Place the dried chickpeas in a large bowl and cover completely with water.
- Stap 2.The chickpeas will swell and absorb the water as they soak.
- Stap 3.Let stand for 24 hours, then drain thoroughly.
- Stap 4.2. Make the Falafel Mixture: Add the soaked chickpeas to a food processor and grind them.

- Stap 11.Continue grinding until the mixture forms a sturdy, malleable texture.
- Stap 12.Taste the mixture and adjust seasoning — falafel can easily become too bland.
- Stap 13.3. Shape the Falafel: Form balls by hand, slightly smaller than croquettes.
- Stap 14.Squeeze them firmly so they hold together well, as the mixture can crumble if too loose.
- Stap 15.4. Preheat the Airfryer: Preheat to 180 °C.

- Stap 20.Bake for 5 minutes at 180 °C.
- Stap 21.6. Shake & Increase Heat: Gently shake the basket to turn the falafel.
- Stap 22.Be careful — they are still delicate at this stage.
- Stap 23.Increase temperature to 190 °C and bake for another 5 minutes.
